Delta's nonstop New York-JFK → Olbia runs from late May to early October, 4 times a week. That aligns almost perfectly with the ideal window: catch the tail end of shoulder season in early June or late September for the best sea + fewer crowds + nonstop flight. Booking JFK–OLB roundtrip for the last week of September is one of the highest-value trips you can plan.

June and September. Sea is 22–24°C / 72–75°F, air 25–28°C / 77–82°F, everything is open, and prices are 30–50% lower than August. May and early October are excellent for hiking and sightseeing but the sea is cool for U.S. swimmers used to warmer water. July and August are hot and crowded but the sea is at its warmest.
Daytime highs run 29–33°C / 84–91°F in Palau, hotter inland. It's manageable near the coast with sea breezes, but beach parking fills by 10:30am and restaurants require reservations. If you can travel in June or September, do — same beaches, half the stress.
Cold-water swimmers, yes — sea is 18–20°C / 64–68°F. Most Americans find it too chilly for more than a quick dip. By late May it climbs toward 21°C. If swimming is the trip's main point, aim for mid-June onward.
First half is beautiful — 24–26°C air, 22°C sea, half-empty beaches, harvest festivals. From mid-October many beach clubs and boat tours close for the season. Delta's JFK–Olbia nonstop usually ends in early October, so plan flights accordingly.
For hiking and food-focused trips, yes — but this isn't a beach trip. December–March you get 12–15°C days, dramatic empty coastlines, and prices at their lowest. Many restaurants and hotels in Palau close November to March; check before you book.
Typically Easter through late October, with peak frequency (multiple daily departures) from mid-June to mid-September. In shoulder season expect one departure per day depending on weather.
May and late September to mid-October — flight and accommodation prices drop 30–50% versus August, and the weather is often better. Avoid the 10 days around Ferragosto (Italian national holiday, August 15) when everything doubles in price.
